Recipe – Peanut Butter Oatmeal Cookies

Hi y’all,

As you might know by now I am studying nutrition and dietetics in The Hague. The course is really interesting to me because all of my classmates have got a different opinion on what healthy entails. One of my classmates is a bodybuilder and eats loads of quark and chicken but my other classmate (and friend) is very interested in chia seeds, wheatgrass juices and other superfoods. Now, it is this friend who gave me the recipe for these delicious peanut butter oatmeal cookies. I was surprised at first because I never saw her eating anything that’s considered bad for your health. But, she told me these cookies are as healthy as cookies can get (I am not sure if I agree with her but alrighty…) and so I decided to share this recipe with you guys! I know how y’all love some good old peanut butter, so here it goes.

What do you need?

  • 1 cup of peanut butter
  • 2/3 cup of brown suger (preferably sugar cane)
  • A splash of vanilla extract
  • 2 eggs
  • 2/3 cups rolled oats
  • 1 teaspoon of baking soda
  • Whatever you like: raisins, dark chocolate (chips), hazelnuts, etc.

Instructions:

  1. Preheat the oven to 120 degrees Celsius or 350 degrees Fahrenheit;
  2. Mix the oats with the baking soda;
  3. Mix the peanut butter, sugar, eggs and vanilla with an electric mixer until it’s smooth. Add the oats and baking soda and extra ingredients such as raisins or dark chocolate (chips);
  4. Roll the cookies into tiny balls and flatten them with your hand onto the baking sheet;
  5. Bake the cookies for 10 minutes.

Quick tip:

Not a big fan of rolled oats? Put the oats in a food processor and turn it into an oat flour.

Update

Hi y’all!

Long time no see! I wanted to post a few updates before but because I’ve been incredibly busy, I simply couldn’t find any time. I hate saying that though, it feels like I am making excuses. And that’s not me anymore, nuh-uh. So let me tell you what I’ve been up to lately.

The biggest change in my life has been starting a new course. I am studying nutrition and dietetics in The Hague to become a dietitian. The first few weeks have been very overwhelming and I have my very first introduction exam this monday. I feel unprepared but I am sure everything will be fine. All the subjects are very interesting and will provide me with loads of information to talk about and use for my own weightloss journey.

After the first week of school I felt this big urge to get back to my weightloss roots and sign up at Weight Watchers again. The last couple of months haven’t been very exciting weight-wise and I really want to kick some butt these last months of 2013. The first week went great and I lost 1,4 kg. But due to exam stress I haven’t tracked any of my food and I feel really bad about that. I am sure I’ve gained some pounds but I refuse to weigh myself (hey, give me a break will ya?). This tuesday though, I’ll get back on the sadle, because I’m on a mission. I want to get below 90 kg’s before the end of the year. And I am going to nail it! The holidays got nothing on me.

And the last important thing I’ve got to share with you is that I’ve got a new job. And according to my mom a new job means we have to celebrate with pastries. I only at half of my pastry so I could save some ProPoints. I used to work as a call agent for an energy company (not the best job ever…) but in October I’ll start my new job at Primark. I am going to be a salesperson at the lingerie department.

As you can tell I’ve got a lot of changes going on in my life. And I haven’t even told you everything! But I will though, starting from now.

Recipe – Homemade Cereal Bar Cookies

Hi y’all,

There won’t be a weekly weigh-in this week (or next week for that matter). I am not on my best behavior and I am going to Disneyland Paris this weekend so I already know what the scale is going to say. Something along the lines of: ‘I hate you, leave me alone! Get back to me when you’re slimmer again, selfish bastard!’. So I figured, why not upset the scale a little more? And that’s why I decided to bake some homemade cereal bar cookies I found on the blog ‘Once a Month Mom‘ by Tricia. Most of the recipe will look exactly like Tricia’s though I did make a few tweaks.

What do you need?

  • 1 cup of butter, softened
  • 1,5 cup of oats, ground (or oat flour)
  • 2 cups of whole wheat flour
  • 1 cup of brown sugar
  • 1 teaspoon of vanilla
  • 2,5 tablespoons of apple sauce
  • 9 ounces or 255 grams of jam (any kind you like, I used blueberry jam)

Directions:

  • Step 1: Preheat the oven to 350 degrees Fahrenheit or 176 degrees Celcius.
  • Step 2: Use a muffin tin and add paper muffin cups or grease the cups with butter or cooking spray.
  • Step 3: If you don’t have oat flour in your pantry simply grind 1,5 cup of oats with a foodprocessor. It might take a while but it’s worth it!
  • Step 4: Mix all the ingredients, except for the jam, with your hands. If the ingredients don’t stick together add a little more apple sauce, it will do the trick.

  • Step 5: Use 3/4 of your dough to fill the bottom of the cups.
  • Step 6: Create a dent in the dough and fill it with a little bit of jam.
  • Step 7: Take the rest of your dough and put it on top of the jam. Be careful, you don’t want the jam to seep out.
  • Step 8: Bake the cookies for about 20 to 25 minutes and let it cool down a bit. Now it’s time to attack them!

Quick tip:

Are you unable to eat all the cookies before they go bad? Or do you love to mealprep? Then don’t throw these cookies away, freeze them! Simply let the cookies cool off, put them in a ziplock bag or Tupperware box (wrap them in wax paper first so they won’t stick to each other) and put them in the freezer. When you want to use them you can thaw them overnight or as Tricia suggests place them in a microwave and heat them for 30 seconds to 1 minute. The jam will be hot though so be careful when you try this out!

Weekly weigh-in

Hi y’all,

So, it’s time for the weekly weigh-in! I haven’t been around a lot thanks to a death in the family and a lot of other issues I had to deal with. But I am back… back with good news that is!

I’ve lost 1,1 kilograms in one week! I am so happy with this result. I finally feel like I am getting back on track. And you know the fun part? I’m not even working hard for it. I am simply eating less but I am still enjoying a few treats every now and again. And that is exactly how it should be. I can’t wait to get back to weighing 97,4 kilograms and less. I felt so good back then. Hopefully I’ll be able to reach that weight before I go back to college.

Weekly weigh-in

Hi y’all,

I know I’ve promised you this update yesterday, but I kinda forgot that I wouldn’t have any access to the internet. I know, who hasn’t got any internet these days right? But heck, I’ve got access now so here it goes!

If you’ve read my summer challenge post you know that I expected to weigh somewhere around 103/102 kilograms. Well, my body has decided to be good to me because yesterday I weighed 100,1 kilograms! Unfortunately it still means I have gained a few pounds compared to a few weeks ago.

It seems like I just can’t break free from weighing around 100 kilograms. Something tells me that it’s probably just a mental thing. I am in my comfort zone right now and I have no idea what will happen once I weigh under 100 kilograms. That’s the whole thing. I am anxious for what the future has got to offer once I’ve reached my goal weight.

Next week I would love to weigh under 99 kilograms. But I am having two weeks off which means that I will go on a few lovely road-trips. And you know what that means! Fast food and snacks everywhere! Hopefully I will be able to find some balance.

My summer challenge

Hi y’all,

I just stepped on the scale (at night, which is not one of my brightest ideas) and it scared the shit out of me! Pardon my French, but according to the scale I now weigh 103 kilograms! Last time I weighed myself the number I saw was 98,8. There is no need to say I am not behaving too well, I need to step up my game. I have been eating too many ice creams and chocolate treats and it needs to stop right now. So, I came up with a summer challenge that will help me to reach a lower weight.

The plan

  • Eat clean
  • Prepare a weekly menu every single Sunday, before the next week begins
  • Mealprep
  • Track points with the Weight Watchers ProPoints system
  • Workout at least 3 times a week
  • Quit drinking Diet Coke
